Compared to Baby Back Ribs, St. Louis Style Ribs are longer, meatier, and contain more fat, making them ideal for browning and slow-cooking to achieve tender, fall-off-the-bone perfection. While they can be used interchangeably in recipes, their larger size requires a longer cooking time for optimal flavor and texture.
