Ingredients
-
2–2.5 lbs John Henry’s Chicken Wings
-
1 1/2 tbsp baking powder (aluminum-free preferred)
-
2 tsp garlic powder
-
2 tsp onion powder
-
1 tsp paprika
-
1/2 tsp salt
-
1/4 tsp pepper
-
Your favorite wing sauce (optional)
Instructions
-
Pat wings completely dry using paper towels — this helps with crispiness.
-
In a bowl, mix together baking powder and all the seasonings.
-
Add chicken wings to the bowl and toss until fully coated.
-
Preheat oven to 250°F.
-
Line a baking sheet with foil and place a roasting rack on top.
-
Arrange wings on the rack, spaced evenly.
-
Bake for 30 minutes on the bottom rack, flipping once halfway through.
-
Increase oven temperature to 425°F.
-
Bake for another 60 minutes, flipping the wings every 15 minutes for even browning.
-
Remove from oven, serve hot — either plain and crispy, or tossed in your favorite wing sauce.
Pro Tips
-
Want to shortcut the spice mix? Use 4 tsp of your favorite seasoning blend instead.
-
Aluminum-free baking powder gives the best texture without bitterness.
-
For extra crispiness, broil the wings for 2–3 minutes at the end (watch closely!).
