3 lbs John Henry’s Tenderized Chicken Breast

Salt & pepper to taste

Optional seasoning (garlic powder, Italian seasoning, etc.)

1 cup spinach

1/2 cup feta cheese

1 cup broccoli florets, trimmed small

1 lb John Henry’s Hickory Smoked Bacon

1/2 lb John Henry’s Mozzarella Cheese (shredded or sliced)
Instructions

Preheat oven to 375°F.

Lay out a square of foil for each chicken breast.

Flatten chicken breast on foil and season with salt, pepper, and optional spices.

On one half of the chicken, layer bacon, leaving half the strip hanging off to use as a wrap.

Top with a layer of spinach, feta, and broccoli.

Roll the chicken tightly toward the bacon side, then layer in mozzarella and finish the roll, wrapping the bacon and cheese all the way around.

Wrap the entire roll securely in foil, creating a sealed foil “house.”

Place wrapped rolls in a baking dish and bake for 25 minutes, or until internal temp hits 165°F.

Carefully remove foil and sear in a hot non-stick pan to crisp the bacon on all sides.
