Stuffed Chicken Breast Wrapped in Bacon

John Henry's Tenderized Chicken Breast
3 lbs

Additional Seasoning
1 Cup
Feta Cheese
1/2 Cup
Broccoli Florets
1 Cup, trimmed small if needed
John Henry's Regular Cut Bacon
1 lb
John Henry's Mozzarella Cheese
1/2 lb, sliced or shredded
Flatten out the chicken breast on a foil square. 
Sprinkle with salt, pepper and seasoning.
Arrange bacon on one side of the Chicken Breast, leaving half hanging off for wrapping later.
Layer on the Spinach, Feta & Broccoli and start to roll it tightly towards the extra bacon.
Add the Mozzerella Cheese and continue rolling, allowing the bacon and cheese to wrap all the way around the chicken breast. 
Wrap in tin foil and seal in a little tin foil house. 
Place in a baking dish. 
Bake at 375 degrees for about 25 minutes. 
Test for doneness with a meat thermometer, it should read 165 degrees. 
Remove from the oven and carefully remove the tin foil. 
Sear the bacon in a non-stick pan to crisp up the bacon on all sides before slicing and serving.
