John Henry's Boneless Skinless Chicken Breast

Pineapple
1 cup, chopped
Mango
1 cup, chopped
Red Onion
1/2 onion, diced
Avocado
1 avocado, chopped
Cilantro

Wildtree's Guacamole Seasoning

PREPARATION
- Add chicken, orange juice, honey, black pepper, Chipotle Lime Rub, and Garlic Galore Seasoning Blend to your Instant Pot. Toss to combine the ingredients and coat the chicken breasts.
- Cook on high pressure for 10 minutes for the natural release method, or for 15 minutes if you plan to use the quick release.
- Toss the pineapple, mango, red onion, avocado, cilantro (if desired) and guacamole seasoning together, refrigerate until serving.
- After the Instant Pot has finished, slice or shred the chicken breasts and serve with your homemade fruit salsa. Serve on corn tortillas with a side of rice, and fresh salad greens!
