Flank Steak Pinwheels

INGREDIENTS
John Henry's Flank Steak
1.5-2lbs, tenderized*
Rancher Steak Rub
1-2 Tbsp
Shredded Cheese
2 cups
Fresh Spinach
2 cups
Bamboo Skewers
10-12
John Henry's Butter
2 Tbsp
PREPARATION
  1. Unroll the flank steak and flatten out.
  2. Sprinkle on a generous amount of your favorite steak rub seasoning.
  3. Spread the shredded cheese out in an even layer on the steak.
  4. Remove any tough stems from the spinach and spread it out as the next layer.
  5. Roll against the grain, from the long edge, keeping the cheese and spinach layers tightly tucked together. Use bamboo skewers or toothpicks to pin the roll together.
  6. Slice the roll in 1 inch pinwheels.
  7. Preheat the oven to 425 degrees. On the stove top preheat an oven-safe skillet to medium-high heat.
  8. Add butter to the pan and sear pinwheels for 5 minutes.
  9. Turn them over to sear the second side and put the pan into the oven for about 10 minutes.
  10. Serve with roasted veggies and enjoy!
