John Henry's Flank Steak
1.5-2lbs, tenderized*
Rancher Steak Rub
1-2 Tbsp
Shredded Cheese
2 cups
Fresh Spinach
2 cups
Bamboo Skewers

PREPARATION
- Unroll the flank steak and flatten out.
- Sprinkle on a generous amount of your favorite steak rub seasoning.
- Spread the shredded cheese out in an even layer on the steak.
- Remove any tough stems from the spinach and spread it out as the next layer.
- Roll against the grain, from the long edge, keeping the cheese and spinach layers tightly tucked together. Use bamboo skewers or toothpicks to pin the roll together.
- Slice the roll in 1 inch pinwheels.
- Preheat the oven to 425 degrees. On the stove top preheat an oven-safe skillet to medium-high heat.
- Add butter to the pan and sear pinwheels for 5 minutes.
- Turn them over to sear the second side and put the pan into the oven for about 10 minutes.
- Serve with roasted veggies and enjoy!
