Grilled Chicken & Veggie Skewers

🧾 Ingredients

  • 2 lbs John Henry’s Chicken Bites

  • 1 red bell pepper, cut for skewers

  • 1 green bell pepper, cut for skewers

  • 1 yellow onion, cut for skewers

  • 1 tsp dried basil

  • 1/4 cup organic coconut oil

  • 1 tsp Rancher Steak Rub

  • 1 tbsp California Style Garlic Pepper Blend

  • 2 tbsp balsamic vinegar


 Instructions

Freezer Meal Option:
Place all ingredients except balsamic vinegar into a freezer bag. Squeeze to mix, seal, and freeze. Thaw completely before grilling, then add balsamic vinegar before cooking.


  1. In a large bowl, combine chicken, peppers, onion, oil, vinegar, and seasonings. Toss to coat evenly.

  2. Preheat grill to high heat. Clean and grease the grates.

  3. Thread chicken and veggies onto skewers, alternating pieces.

  4. Grill for 2–3 minutes per side, turning until the chicken is charred and cooked through (165°F internal temp).

  5. Remove from grill, rest for 2 minutes, and serve hot!

  • Soak wooden skewers for 30 minutes to prevent burning.

  • Add zucchini or mushrooms for more variety.

  • Serve with rice, couscous, or a simple side salad.
