Our Beef Shank is cut from the rear, lower leg of the cow at about 1 1/2" thick, with all the meat still attached. These muscular cuts come from well-exercised cows, which makes the meat dense and flavorful but low in fat. Because of its density, the Beef Shank is best suited for slow cooking, where the meat becomes tender and flavorful when cooked with additional liquids.
