What You're Getting

Our Pasture-Raised Pork Shoulder (or Pork Butt) is the perfect cut for slow cooking or smoking. This popular cut of meat comes from the upper shoulder of the front leg of the pig and often includes part of the blade bone. As it slow cooks the marbled fat will melt into meat, developing both flavor and tenderness. The shoulder can be cut into roasts ranging from 2-10lbs or it can be cut into thin slices as pork steaks, and thick strips for country-style ribs.

Our butcher cuts each Pork Shoulder at approximately 2.5-3.5lbs and you'll receive 1 piece per package. This roast can be cut to order - up to 10lbs!

Helpful Hints & Cooking Tricks

Pork Shoulder cuts can either be cooked low and slow or hot and fast. The bones and fat keep the meat from drying out no matter which cooking method you use. It is a great cut for pressure cooking on a busy weeknight! Serve Pork Shoulder as a hearty roast or shred it for pulled pork sandwiches, pork tacos, and more!

Farming Practices

All of our pigs here at John Henry's are fed a mix of non-GMO corn, oats, and alfalfa, and they also love to rut around in the dirt outside looking for more snacks to eat! They are raised locally, and they are never given any hormones or antibiotics. Our fields and feed are never exposed to harsh chemicals or pesticides. Our pigs are pasture-raised and spend their days being outside as much as they wish!
