Flank Steak is cut from the flank of the beef, near the rear quarter which is a very thin, very lean section of muscle. Flank Steak is best when either marinated or slow cooked so that the tightly woven muscle fibers can break down and tenderize the meat from within. Our butcher trims the Flank Steak and scores it for you so it's ready for your favorite marinade or seasoning rub. Grill it or roast it and slice thinly against the grain for serving. A serving size for these lean steaks are about 8 oz per person, so one of our average sized Flank Steaks would be about 2-3 servings.
All of our cows here at John Henry's are grass-fed and grass-finished. We raise them locally on our family farm, and they are never given any hormones or antibiotics. Our fields and feed are never exposed to harsh chemicals or pesticides. Our cows are pasture raised and love to spend their days being outside with either their faces towards the sun or their rears towards the wind!
